All cooking demos will take place in the Coffman Theater on the first floor of Coffman Memorial Union, except for Nathan Huerkamp, who will be in the President’s Room on the 3rd floor. AmyLeo’s journey into vegan cooking began at the age of 13 when she started cooking for her family of 10 using Betty Crocker as her guide. The skills that she learned in these early years later proved to be very beneficial when she became passionately committed to a vegetarian, and then vegan lifestyle. She has since founded The Vegan Pantry in which she teaches public and private cooking classes as well as coaches clients towards plant-based eating in the Twin Cites Metro Area. When not playing with food, AmyLeo enjoys dancing, canoeing, kayaking, camping, cross-country skiing, and other outdoor activities. She is a co-facilitator for the Alternatives To Violence Project, founder and facilitator of Dancing Your Own and founder and convener of Claim Human: Reinventing Our Relationship With Animals.”

Tess will demo dishes including Thai Red Curry Noodles.
Tess Challis is a vegan chef and wellness coach, and the author of five cookbooks. Her passion is to help people achieve vibrant health while eating delicious food. This passion was born from her childhood health struggles that were resolved by following a nutritious plant-based diet. Over the last 20 years, she has worked as a wellness coach, chef, workshop leader, speaker, writer, and mom. Tess currently resides in SW Colorado.

Cutting Your Prep Time with Better Knife Techniques
Nathan will demonstrate knife skills focusing on how to cut various fruits and vegetables safely and efficiently.
Nathan Huerkamp is renowned around the Twin Cities as “Your Friendly Neighborhood Vegan” and is active in the community through his participation with Compassionate Action for Animals, performing cooking demonstrations for plant based foods, facilitating discussions with Bridges of Respect, and working for vegan companies.

Kale and Aubry will demo Halloween-themed foods including Sloppy Joes in puff pastry shaped to look like intestines!
Sister and brother duo Aubry and Kale have spent the last several years perfecting The Herbivorous Butcher’s deliciously deceiving meat-free meats. Currently they fulfill demand from their retail shop in Northeast Minneapolis, where they sell flavorful, nutritious and satisfying meat alternatives. You can purchase their meatless meats alone or in pre-made sandwiches.
